Why Krusteaz Protein Pancake Mix?

In our family, like many across the country, breakfast is a staple. Depending on the day, we have a wide range of foods. It could be eggs and toast one day, followed by yogurt and fruit the next and on occasion we have to toss in pancakes since they are a family favorite.

This past weekend, I decided to whip up some Pumpkin Pecan Protein Pancakes for breakfast and they were a huge hit in our house! These pancakes have more of a cake consistency and are amazingly delicious topped with whipped topping and extra pecans.Pumpkin Protein Pancake

Ingredients

1 1/2 cups Krusteaz Protein Pancake Mix
1/2 tsp. pumpkin pie spice 
1 tsp. vanilla
3/4 cup canned pumpkin

1 3/4 cup water
2 TBS crushed pecans
1 TBS brown sugar

Instructions

1. In a large mixing bowl add pancake mix, pumpkin puree, vanilla and pumpkin pie spice. Slowly add water to desired thickness, mix slowly. Stir to combine.

2. Coat griddle or large nonstick skillet with cooking spray and set it over medium-high heat. When pan is hot, add batter onto the griddle or pan using approx 1/4 cup batter for each pancake.

3. Cook until bubbles form on top of the pancake and batter is set. Then use a spatula to flip the pancake and cook until golden brown.

4. Top with whipped topping and sprinkle with left over pecans if desired.
