This has been a favorite recipe of mine for a long time. I first ran across this recipe several years ago and some how it got lost until recently. I started out of the blue craving this dish and searched high and low to find my long lost recipe.
This is an easy dish and I always seem to have the ingredients on hand. In the picture below I served it over jasmine rice but it can be served over any of your favorite pastas or grains or simply alone which is tasty as well! I am thinking this might be amazing paired with spaghetti squash but I have yet to try it.
9 oz. package prewashed spinach
4 boneless, skinless chicken breasts, uncooked
1/2 tsp. pepper
2 Roma tomatoes, sliced (I used whatever tomatoes I have on hand)
1 cup sliced fresh mushrooms (I used an entire pre-sliced basket)
1.4 oz. packet Italian salad dressing mix
Balsamic vinegar
2 cups shredded mozzarella or Parmesan cheese (I use both mozzarella and parmesan)
16 oz package anagel hair pasta or rice
Place spinach in the bottom of a coated 9 x 13 inch baking dish. Place chicken on top of the spinach; season with pepper. Place the tomatoes and mushrooms on top of the chicken. Mix the Italian salad dressing according to the package directions, substituting the balsamic vinegar for regular vinegar (I also used olive oil in the dressing mix). Pour the dressing over the spinach, chicken, tomatoes amd mushrooms. Top with the cheese. bake at 350 degrees for 40 minutes. Serve over angel hair pasta or rice.
