Did you know that February is heart health month? One way we choose to eat a little better in our family from time to time is by using Shirtaki noodles and tofu as a substitution. I use tofu for many different things. I use it in smoothies, to make tofu scramble, even enjoy it as BBQ…that’s right..BBQ! It’s very easy to use tofu as a healthy option, but I admit that there is a learning curve. For example, when I barbeque it, I freeze the firm, thaw it out and then press it between two heavy plates to get all the water out of it. After that, it cooks up perfectly every time.

Shirataki Noodles
Not only do they offer a variety of tofu, but they also have the shirataki noodles. I remember back when it was next to impossible to find these little gems. Being that I live in a small town, I would have to drive two hours to the nearest Whole Foods to pick them up. Now that they are beginning to get so popular, I can find them at my local grocery.
So what’s my take on them? I think they are great. I admit that I love a big plate of pasta just as much as anyone, but pasta doesn’t love me back at all. It leaves me feeling pretty blah, and that’s why I choose to use the shirataki noodles in their place.
Shirataki noodles are:
• Low calorie (0 – 20 calories per serving) & low in carbs (1 – 6g per serving)
• Gluten-free, Non-GMO Project verified, and Kosher certified
• Conveniently pre-cooked and packaged in water
• Shirataki noodles are suitable for most traditional pasta or noodle dishes (e.g. Asian, Italian, soups and salad), and all of them are interchangeable.
