I love to cook and I love to bake.  I have always been very happy that my four year old along with my nineteen year old share my love of baking.  I do secretly hope that at least one of my children will also eventually love to cook as much as I do as well.

The very first recipe we tried in this book was the Healthy Chocolate Pumpkin Cookies.  Now my four year old was super excited at first when I told him it was a recipe that he could do pretty much all by himself.  He would just need me to open stuff for him and of course put it in the oven.  So as we get out all the ingredients he starts saying how good they will be as he is pouring the cake mix into the bowl.  Then he gets to the pumpkin and decided that these cookies are going to taste terrible he just knows he will not like them…WRONG! He loves them and guess what? He can’t taste the pumpkin. No one can 🙂  So here is the recipe for that:

Healthy Chocolate Pumpkin Cookies

Ingredients:
1 (18.25 ounce) package devil’s food or chocolate cake mix
1 (15 ounce) can unsweetened pumpkin puree
Optional: 2/3 cup miniature semisweet chocolate chips

Directions

  1. Preheat oven to 350
  2. mix the cake mix and pumpkin puree in a large bowl with a wooden spoon until blended (dough will be stiff). If desired mix in the chocolate chips
  3. Drop by tablespoonfuls, 2 inches apart, onto prepared cookie sheet
  4. Bake 8-11 minutes or until edges are firm and center is just barely set when lightly touched.  Cool 1 minute of sheets, then remove cookies with spatula to wire racks to cool completely.

VARIATION for Healthy Chocolate-Pumpkin Cookies:
Healthy Pumpkin-Spice Cookies: Prepare as directed, but use a spice or yellow cake mix and add 1 1/2 teaspoons pumpkin pie spice or cinnamon.  If desired, add 2/3 cup chopped dried cranberries or raisins.
