Being as I try to always encourage my family to eat healthy and to make healthy choices when it comes to food. I also know that since I do all the cooking in the house that it is up to me to make sure that they get the best possible at home.
I don’t use a ton of oils when cooking, but I do use them on occasion. However, when it comes to cooking with oil, I want the healthiest possible. I recently had the opportunity to try the Tropical Traditions Organic Virgin Coconut Oil. This stuff is amazing!! Since receiving this product, I have used it in place of any type of oil that I would normally cook in and everything just seems to taste better. I am not a huge fan of coconut, but I do love the taste of this oil. The coconut flavor of Tropical Traditions is very mild and not really noticeable at all when used in cooking. I also wanted to add that since I have started using this oil, I have noticed an increase in energy level.
I love the fact that it is Organic, but also for the health benefits of the Coconut Oil. I know some people who will simply eat a tablespoon of this a day.
* 1 lb. lg. fresh shrimp, peeled
* 1/2 cup organic coconut flour
* 1/4 cup organic corn starch
* 1/2 teaspoon fine Himalayan salt
* 1/2 cup water
* 2 eggs
* 2 1/2 cups organic shredded coconut
* 1/2 cup Virgin Coconut Oil
* 1/2 cup Virgin Palm Oil
Mix the coconut flour, corn starch, salt, water, and eggs in a bowl with a fork until blended together. Dip the shrimp in the batter and then roll in the shredded coconut. Heat the coconut oil and palm oil in a skillet at about 375 degrees. Fry the shrimp until golden brown – about 1 minute per side. Drain on paper towels before serving. Note: If you don’t want the taste that the Virgin Palm Oil imparts, use organic Palm Shortening instead.
