Place the elderberries, rosehips, cinnamon stick, cloves, and ginger into the saucepan and cover with water.

Bring to a boil, reduce heat to low and simmer for 35-45 minutes. Until the liquid has reduced by almost half.

Smash the berries. Strain the mixture through a fine-mesh strainer.

When mixture cools to lukewarm, add 1/2 cup raw honey.

Bottle the syrup and store in the refrigerator.
