More Gardening Fun & Pickled Radish Recipe

Mary, Mary, quite contrary,

Isn’t that just a lovely nursery rhyme? It’s always been one of my favorites and I admit that  I wished that my garden grew that way. In reality we all know that it’s hard work growing a garden, but it’s also fun and rewarding. It’s such an awesome feeling being able to feed your family foods that have been grown.Radishes
We choose to do organic gardening as I mentioned before and I’m still learning the ins and outs of it.  I wasn’t raised doing organic gardening but choose to for my kids as well as for the environment. Currently, the vegetables are doing amazing! The recent rain has just really helped them take off, but it’s also helped the weeds take off. As soon as the ground dries a little, I know exactly what I’ll be doing… weeding and having a “tweetle beetle battle” since the bugs have also discovered the garden!
Zuchini
Our bottom garden is the worst, but the dirt is pretty awesome.  Last time we cleaned out the chicken coop, we put it all down there and turned it into the ground.  So with the help of the rain and the “fertilizer”, it looks like I’ve put a beautiful green carpet around my veggies. This one is gonna be tons of work to keep weeded because the ground is so fertile. I do plan on putting newspaper down between the rows and covering that with mulch to help keep the weeds down, but it’s just not been dry enough to do all that yet.

We did get radishes from the garden yesterday (pictured above) and I made pickled radishes which are super tasty.pickled radishes

Pickled Radishes

Ingredients
  1. 1 bunch of radishes
  2. 3/4 cup water
  3. 3 tablespoons maple syrup
  4. 3/4 cup apple cider vinegar
  5. 2 teaspoons salt
  6. 1/2 teaspoon red pepper flakes
Instructions
  1. Wash and prepare the radishes, then use a sharp knife to cut them thin.
  2. Once sliced, pack radishes in a pint canning jar and sprinkle with red pepper flakes.
  3. In a small saucepan, combine the vinegar, water, maple syrup and salt. Bring mixture to a boil, stirring occasionally.
  4. Once mixture has come to a boil, pour it over the top of the radishes.
  5. Let mixture cool on the counter. You can eat it immediately or store in the fridge.
Notes
  1. More spice? Add up to a teaspoon of red pepper flakes.
  2. These are awesome on a burger.

I’m looking forward to the cucumbers and all the other veggies getting to the point of producing. Most were started via seeds with the exception of the tomato plants. so i have awhile to go. Stay tuned….

    This is the first time I’ve heard of pickled radishes.
    I enjoy growing a garden also.
    Nothing like fresh veggies you grew yourself!
